We all know that feeling: you are sitting at the office, the morning fades away and you start getting peckish. Once again, you haven’t brought lunch from home. You weight the alternatives: a sandwich from your local cafe? A fancy but pricey salad? And as you eat the same plate for the tenth time this month, you tell yourself that you are going to start bringing packed lunch. Because not only can buying food every day get boring, it also amounts to a considerable sum at the end of the month.

Bringing packed lunch doesn’t necessarily mean the same old homemade sandwich or leftovers from the night before; and it shouldn’t take hours to prepare, either. We all know that the main reason we end up buying lunch is because we generally don’t have time to cook it ourselves. Having a few quick and tasty lunch box salad recipes up your sleeve will save you time and money.

We have shared some of our favourite salad recipes that can be quickly put together at home and are perfect for spring.

 

Roast tomato and goats cheese salad with kiwi fruit from Belleau Kitchen

This roast tomato salad is a refreshing change from the run of the mill but is still very simple to knock together.  Roast the tomatoes in advance, and combine the juices with the olive oil and balsamic to make an instant dressing.

What you will need:

  • 2 long vines of cherry or baby tomatoes
  • olive oil
  • balsamic vinegar
  • maldon smoked sea salt flakes
  • 2 stalks of fresh rosemary
  • a selection of salad leaves – i used a mixed bag of baby leaves and some red cos
  • a handful of pumpkin seeds
  • 100g soft goats cheese or cream cheese
  • 1 kiwi fruit – peeled and sliced
  • 1 half a fennel bulb – thinly sliced

Bacon, avocado & warm vegetable salad from The Crazy Kitchen

This is a very tasty and satisfying salad that can be put together very quickly the night before. You just need 10 to 15 minutes to fry the bacon and cook the vegetables until they soften. You can keep some balsamic vinegar and olive oil in the office to add it just before eating it – this keeps the salad fresh.

What you will need:
  • 3 rashers of dry cured streaky bacon
  • 1 red onion, sliced
  • a few thin slices of aubergine
  • 1/2 courgette, sliced
  • 1 avocado, peeled,stoned & sliced
  • salad leaves – I used cos and rocket
  • balsamic vinegar

5 ingredient lemon basil chickpeas from The Collegiate Vegan

If you are really pressed on time but still want to pack a lunchbox, this salad is for you. Not only is it easy to make (did we mention it has only 5 ingredients?) but it also tasted delicious. Just mix the avocado with the lemon juice, toss all the ingredients together and enjoy!

  • 1 can of chickpeas
  • 1 avocado
  • juice of 1 lemon
  • handful of basil, chopped
  • handful of spinach, chopped

Superfoods salad from The English Kitchen

This is a perfect salad for spring: colourful, exotic and packed with super foods. The good news? it is also super easy to make: just boil the couscous until it’s ready, let it cool and mix with the rest of ingredients. A little trick: if you have extra time, bake the nuts for 8 to 10 minutes before adding them to the salad – it brings out their natural flavour.

What you will need:

 

  • 1 cup of pearl couscous (Israeli couscous)
  • 2 heaped tablespoons of finely grated Parmesan cheese
  • the juice of one lemon + its zest
  • Extra virgin olive oil
  • 1 tablespoon whole grain mustard
  • fine sea salt and freshly ground black pepper to taste
  • a small handful of fresh parsley coarsely chopped
  • 1 cup of fresh blueberries
  • 1/2 cup toasted pecans
  • a couple handfuls of rocket (baby arugula)
